Raw Beet Salad

Ingredients (2 servings)
- 1 beet, washed
- Juice of 1 orange
- Juice of 1/2 lemon
- 1 scallion
- 2 tbsp extra-virgin olive oil
- 1 tsp sea salt
- 1/2 tsp pepper
Shred the beet with a hand grater or in a food processor with the appropriate attachment.
Add the orange and lemon juices, chopped scallions, olive oil, salt and pepper.
Toss and serve atop romaine lettuce leaves. Enjoy!
