Walnut and Goat Cheese Truffles

Lately I’ve been having fun putting together ingredients that are already known to pair well together, only adding my own unique presentation. A classic party cheese plate combo is soft goat cheese drizzled in high quality honey and garnished with a side of whole walnuts. Instead of pulling out the cheese knives, you can just enjoy the following recipe by the pop. Three ingredients make a unique, surprise-inside goat cheese truffle that everyone is sure to hoard– or just you – no one needs to be invited to this party.

All other nuts, step aside, walnuts glow like no other:

Walnuts: contain nearly twice the amount of antioxidants than the same portion of any other nut, contribute to heart health, reduce the risk of certain types of cancer, prevent Type 2 diabetes and are packed with protein and fiber.

Walnut & Goat Cheese Truffles

Prep Time: 10 minutes

Ingredients (8-10 truffles)

  • 1 cup walnuts
  • 2 tbsp honey
  • 3 tbsp soft goat cheese

Instructions

In a food processor, pulse the walnuts and honey until grainy and able to stick together firmly.

Flatten about 1-tablespoon’s worth of the nut mixture. Roll a teaspoon of the goat cheese into a ball and place in the center of the walnut and honey patty. Fold the sides of the nut base up and around the goat cheese, completely covering it from all sides. Roll to make a ball.

Repeat until you have used up all the walnut paste.
