Cauliflower Crust Pizza

Hello my friends! I’m here with another recipe contribution to Greatist.com. This innovative pizza takes the flour out of the mix, leaving behind a lighter and easier-to-digest alternative without compromising taste. I’ve been seeing cauliflower pizza crusts pop up all over the food blog world, so I figured I’d try my hand at it while removing a lot of the heaviness in some of the other versions. To lighten the dairy load, instead of using cheese in the crust, I opt for yogurt. What you top your pizza with is completely up to you!

The result is absolutely delicious and so so so very crave-worthy!

Some tips when making this: (1) be sure to oil the parchment paper before baking the crust so it doesn’t stick; (2) if you like your crust tougher, replace the yogurt with soft goat cheese instead; (3) the key is to reduce the moisture in the cauliflower before mixing with the other ingredients, so really wrench that liquid out of there!
