Vegan Blackberry Smoothie

Coconut milk offers some uncontested creaminess and decadence to any dish – and it works perfectly in this smoothie. Frozen banana contributes sweetness as well as even more smooth texture. This recipe is free of any added sugars – a few drops of liquid stevia takes care of that without increasing your blood sugar levels. Enjoy!

Blackberries: are packed with the antioxidants anthocyanins, which prevent inflammation and destroy free radicals that lead to cancer. They are also a great source of ellagic acid, an antioxidant shown to protect skin from sun damage and lessen the appearance of wrinkles. The powerful berry also contributes to heart health, eye function, bone strength, diabetes prevention, and digestive tract health.

Blackberry Smoothie

Ingredients (1-2 servings)

  • 1 banana, peeled and frozen
  • 1 can coconut milk
  • 2-3 drops stevia
  • 3/4 cup fresh blackberries

Instructions

Remove the banana peel, chop the banana into three pieces, and freeze. When frozen, combine the coconut milk, frozen banana, blackberries, and stevia to a food processor. Mix until smooth.

I served mine with a few blackberries plopped inside for a surprise.
