My latest creation is none other than a zucchini roll. It’s another creative and fun way to use zucchini. Stuffed with goat cheese, basil, and sun-dried tomatoes, this recipe is a true Italian delight. Make them for a party or enjoy them all by yourself for a mid-day snack or appetizer.
Goat cheese: is lower in the hard-to-digest protein casein, which is particularly high in cow’s milk. It is thus a better alternative for those who have trouble digesting dairy. Especially when raw, goat cheese bears healthy probiotics that promote colon health. Goat cheese is also high in protein.
