Changing Seasons Detox Soup

The transition between one season and another is a great time to do some house cleaning, the kind involving your body. You naturally react to changing whether and your body is in a particularly vulnerable position, which is why taking on a seasonal cleanse or doing something different can be most effective. This soup is an emblem of such change – it bridges comfort and clean simplicity.

Cook Time: 25 minutes

Keywords: soup vegan vegetarian carrots bell pepper kabocha onions

  • 6 medium-sized carrots
  • 2 red bell peppers
  • 1 white onion
  • 2 cups kobacha squash, chopped
  • 3 cloves garlic, smashed
  • 1 tsp pepper
  • 4-6 cups water
  • handful of chopped parsley
  • handful of chopped dill
  • salt, to taste (optional)

Chop the vegetables and crush the garlic and place into a large pot. Add water and bring to a boil. Reduce heat to a simmer and let cook for 25 minutes, or until all the vegetable are tender throughout.

While the soup is still hot, add the handful of chopped herbs (parsley and dill), and then put mixture into refrigerator to cool. Letting it set and cool allows for the flavors to marry with one another and develop a deeper taste.

Once blended, serve and enjoy!

Bon Appetit!
