Green Leaf Fun with Tomato Buns

This is one juicy snack! It can also work as a lunch or appetizer. The tomato acts as a moisture-rich “bun” and the wilted green leaves, sautéed with garlic and olive oil, acts as the filling. It’s exceptionally light and has bold flavors from the garlic, feta, and balsamic vinegar. The tomato balances it all. Enjoy!

Tomato Sandwich

Cook Time: 1 minute

Keywords: vegetarian rocket spinach feta cheese balsamic

Ingredients (2 “sandwiches”)

  • Large bunch of rocket or spinach leaves (2 cups)
  • 2 cloves of garlic
  • Dash of salt
  • 1 teaspoon olive oil
  • 1 tomato
  • 1 tablespoon crumbled feta cheese
  • 2 teaspoons balsamic vinegar

Over medium heat, warm up the oil and add the diced garlic. As it sizzles, add the stemmed rocket leaves or spinach leaves. Cook until wilted, but not browned – about 1 minute.

To assemble, slice across the width of the tomato.

Lie one slice flat on a plate and top with the wilted leaves and crumbled feta. Close the “sandwich” with another tomato slice. Drizzle with balsamic vinegar and serve!

I’d suggest uses a fork and knife, otherwise things might get a little wet. To each his own, though!

Bon Appetit!
