I am a fig fiend, so any recipe involving fresh or dried figs is right up my alley. This recipe is a lunch-apropos roll that brings together the creaminess of goat cheese with the sweetness of dried figs and the crunch of walnuts. They are also a natural laxative due to their high fiber content and really benefit the digestive system. Buy them organic for maximum taste and health. Dried figs concentrate more nutrition in a smaller serving.
A friend linked me to this recipe and it looked so delicious I had to try my hand at it. The verdict? Absolutely delicious and very unique! It reminds me of the fresh fig and goat cheese flatbread pizza I made this Summer.
