Alas, I share with you a VegNews video for my vegan burrito. I must say this is one of my most satisfying meals to whip up vegan style. It has the density and protein from the white bean “cheese”, the flavor from the spicy sautéed vegetable and kidney bean mixture, and just the right cool edge with fresh tomatoes, avocado, lime, rice and greens. Enjoy!
For a recipe variation, check out a vegan burrito I made earlier this year, but with squash as the base for the “cheese”.
Note that for the VegNews video, the cheese recipe is as such:
- 1 can of white beans, drained and rinsed
- 1 tablespoon nutritional yeast
- 1 teaspoon garlic powder
- Salt and pepper to taste
Give it a good mix in the food processor and scrape down the sides in between pulses until its completely combined.
