Vegan Mushroom Cabbage Rolls

This is a new favorite in my kitchen – mushroom stuffed cabbage rolls. The process is relatively simple, but I sure didn’t know that until I tried. It’s a light, but a creatively comforting dish that makes it okay to go in for one, two, three, or more! Try it out yourself and introduce new flavors and textures to your kitchen, without the meat!

Why mushrooms out-glow meat filling:

Mushrooms: are low in carbohydrates and sodium, are an excellent source of cancer-fighting selenium, reduce blood pressure and risk of stroke, are a good source of B-vitamins, contain tryptophan, which is essential to create vitamin B-3 and helps control sleep pattern and mood swings, help to prevent breast cancer and contain a high amount of antioxidant L-ergothioneine, which is important in protecting from UV and radiation as well as contributing to the liver’s detoxification abilities.

    These look great! I have some mushrooms I need to use this week so I’ll just have to stop off and get some cabbage and tomato sauce.
