Cheesy Corn Dip

This recipe is as easy as a homemade dip can get. The sweetness from the peas is deepened by the richness of the cheese. The scallions add a flavorful backdrop that makes the dip something to keep dipping in, again and again. Enjoy!

You know, I love corn, and I love cheese, but I’ve never thought to put them together in dip form. This is such a great plan–I can’t wait to try it with next summer’s new corn!
