Vegan Chocolate Chip Cookies

This is my go-to recipe for chocolate chip cookies. The sugar is replaced with turbinado and the chocolate chips with carob chips. It’s easy and cooks in a mere 10-12 minutes. These have a soft, cakey texture with a slight caramel twang.

Turbinado sugar is extracted during the first press of sugar cane. Its crystals are larger than regular white sugar and it has more of a molasses flavor. It is healthier than white sugar and lower in calories. It is also processed less than sugar.

Chocolate Chip Cookies

Ingredients (15-20 cookies)

  • 2 cups whole-wheat flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2-3/4 cup carob chips
  • 1 cup turbinado (or white sugar)
  • 1/2 cup canola oil
  • 1 tsp vanilla
  • 1/4 cup water

Instructions

Mix the dry ingredients with the carob chips. Add the oil and vanilla and then mix until evenly combined.

Roll into tablespoon-sized balls and bake at 350 degrees Fahrenheit for 12 minutes.
