When I first heard of mung beans and their health benefits, I jumped online to see how I can order some. This mung bean pasta was one of the first forms of mung beans I came across and, it’s incredibly pure with no odd add-ins and minimally processed. What better way to enjoy pasta without the gluten and excess starch. I paired this mung bean pasta with a creamy garlic avocado sauce with lemon zest. It’s delicious, light and satisfying. Enjoy!

Mung beans: come from India and have been used for thousands of years for Chinese medicinal purposes. Today, they are used in the kitchen. Mung beans are high in soluble dietary fibers and low in cholesterol. They lower LDL (bad) cholesterol, prevent breast cancer, regulate hormones, are apt for diabetics and contain approximately 3.16 grams of protein per cup.
Mung Bean Pasta with Avocado Cream Sauce
- Mung bean pasta, prepared according to package instructions for 4 people
- 1 large avocado
- 1/4 red onion
- 1 large garlic clove
- Juice of 1 lemon
- 1 plum tomato
- 1/2 cucumber
- 1 tablespoon nutritional yeast
- Salt and pepper to taste
- Zest of 1 lemon
Directions: Prepare mung bean pasta according to package instructions, enough to feed 4 people. Drain, rinse, and set aside.
In a food processor combine all the remaining ingredients, except for lemon zest, and blend until smooth.
Mix into pasta and garnish with zest. Enjoy!
