Rice can be boring and quite the carb-overload. But, sometimes I crave it. In my mind, nothing beats white rice, but brown rice is a close runner up, and better in the nutritional department. This rice recipe is inspired by the Peruvian rice and meat dish Arroz Tapado, which involves two layers of rice separated by a layer of ground meat mixture. I replace the meat with my own “meaty” vegetables and keep the recipe vegan, but delicious. You’ll love the presentation of this dish, and the taste is exactly what the doctor ordered.
