Quinoa is a powerhouse of fiber and protein that both satiates you and keeps you feeling light. I always try to sneak quinoa into my diet without having it as a side dish, plain. The following recipe for mini quinoa cakes makes for a great snack or meal on the go. Store in a plastic sealed bag and carry with you just about anywhere. You get your quinoa and your vegetable fix. Feel free to replace the egg with a vegan alternative or just nix it all together.
