Vegan Burger Recipe with a Green Juice Pulp Base

I make a green juice every day and I often find myself tossing the pulp. However, I’ve started to become self-conscious about how wasteful doing so is. Therefore, I’ve been trying to explore delicious ways to re-use the pulp. This vegan burger recipe uses the pulp created from juices and combines it with spices for the ultimate vegan treat that is fat-free, nut-free and full of dense flavor. Enjoy!

Vegan Burger Recipe with a Green Juice Pulp Base

Serves 6-8

Ingredients:

  • About 1.5 cups of juice pulp (greens, cucumber, carrot, apple)
  • 1.5 teaspoons cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon millet flour
  • 1 tablespoon water
  • Drizzle of oil for cooking (optional)

Directions: In a bowl, mix together the juice pulp with the cumin, pepper, salt, mustard, garlic powder and red pepper flakes. In a separate, smaller bowl, whisk together the flour and water until thick and without any bumps. Add the millet mixture to the juice pulp bowl. Mix the juice pulp until evenly combined.

Create hand-sized, compact patties and cook for 3 minutes on each side in a pan (greased or ungreased with the oil) over medium-high heat. Be careful in handling and flipping the patties as to not cause them to crumble. They hold their own quite well, regardless.

Serve in a sandwich or alongside greens and veggies. Enjoy this vegan burger recipe and share it with your friends – it’s the best thing since sliced bread and you don’t even need bread to enjoy it 🙂
