Sometimes a long day full of hustle-and-bustle and to-and-fro is best ended with a meal that requires little effort. On days like this, I let the avocado guide my palette. The avocado is a versatile, compact little guy that makes simple leaves and vegetables a hearty, creamy meal.
I drizzled the leaves with the last of my balsamic truffle oil and smeared some organic, stone-ground mustard with apple cider vinegar on the edge of the plate. The balsamic truffle oil is amazing! I nabbed it from a gourmet holiday basket my mother received last year, and I haven’t spotted it at any local grocery store since. I am semi-obsessed with truffle oil, but I rarely cook with it since it’s so expensive. Until we meet again, dear love!
I picked up some olives and sun-dried tomatoes for a salty fix. Never disappoints.
A perfect end to my day.
Simple Avocado Salad
Ingredients:
- butterhead lettuce
- 1 avocado
- handful plum tomatoes
- 1/4 tsp black pepper
- 2 tsp balsamic truffle oil
- 1 tbsp stone-ground mustard
- side of olive assortment and sun-dried tomatoes
That’s it! It’s simple, it’s clean, and has a high glow-factor.
