This recipe is sweet, tangy and spicy all in one.
It’s simple and light, yet the flavors leave you satisfied.
Remember the five (identifiable) taste buds:
1. salty (salt)
2. sour (orange)
3. bitter (cilantro)
4. sweet (orange, mango)
5. savory (salt, red pepper)
Whenever you are constructing a dish, make sure you are fulfilling each of those to some degree. It’ll make for a complete snack/meal that won’t leave you itching for that “something else”.
Mango Cilantro Ceviche
Ingredients:
– 1 mango, peeled and julienned
– 1 orange’s juice
– 1 bunch cilantro, chopped finely
– 1/4 tsp red pepper
– 1/4 tsp salt
Serves 2-3
Directions:
Slice around the mango’s core. I keep the skin on and peel it off after I remove the core, otherwise it becomes too slippery to cut.
The skin should peel right off. If not, skin it closely to the surface with a sharp knife. Watch dem fingas!
Next, slice the mango into even, thin strips.
Set the mango aside to prepare the garnish/sauce.
In a small bowl, combine the juice of 1 orange with finely chopped cilantro, sea salt and red pepper (flakes are best, but for some reason I was feelin’ the powder).
Add the mixture to the mango slices and then toss so the mixture is evenly distributed.
