A lil twist on the yooj

Recently, I read through Kimberly Snyder’s The Beauty Detox Solution.

I’ve been following her blog for a few years. It’s not my favorite blog, to be quite honest, because her lifestyle isn’t very relatable. She works with a lot of celebrities and is an extremely advanced yogi–nothing of which resonates with my lifesyle. Regardless, though, she follows the same school of thought that that reigns the raw food scene in nyc, so the book was a good refresher as opposed to a learning experience. Anytime I read a health book, I’m always motivated to be a bit more on top of my own practices. More greens, less chocolate, more make-up-less days, etc.

After one too many glasses of red wine last night, I craved a simple, refreshing salad this afternoon.

Most meals can be changed with one ingredient. I recently bought this lime pepper flavored sea salt that has magnified the taste of anything I’ve put it on, adding a little spice to normally mild flavors, especially those of my favorite avocado/tomato salad.

Tomato, Ginger, and Avocado Salad with Lime Pepper

Ingredients:

– 1 bunch spinach, washed and with stems removed

– 1 tomato, chopped

– 1/4 red onion, sliced thinly

– 1/2 avocado, chopped

– 1 tbsp freshly grated ginger

– Juice of 1/2 lemon

– 1 tsp lime pepper salt (optional, but lemon salt works too, which is easier to find)

Serves 1

Directions:

Slice and chop and toss!

No oil in this recipe. The fat from the avocado is filling and satisfying enough. The lemon is all ya need.
I love the taste of ginger, especially in this salad, as it works really well with the tanginess of the lime pepper spice.
Grate about 1 tbsp off a nob of ginger and sprinkle atop the salad.
The pepper just tops it off. Note the other ingredients: coriander leaves and lemon grass! So fresh!
VOILA!
