Brussels & Tomatoes
Ingredients
For Brussels Sprouts
- 2 cups Brussels sprouts, halved
- 1/4 cup extra-virgin olive oil
- Salt and pepper
- 2 tsp oregano
For Sauce
- 1 tbsp extra-virgin olive oil
- 2 tomatoes, chopped
- 1/2 white onion, chopped
- Salt and pepper
Instructions
Cut Brussels sprouts lengthwise. Place the pieces on aluminum foil, coating with extra-virgin olive oil and season with salt, pepper and oregano. Bake at 375 degrees Fahrenheit for 20 minutes.
Roughly chop onion and tomatoes. Sautee onions in olive oil, season with salt and pepper, and when they begin to become translucent, add tomatoes. Let cook on medium heat until onions are fully cooked and tomatoes are soft enough to mash.
Serve the Brussels sprouts, topping with the simple tomato sauce.
