It’s really easy, you see. First, there’s the base: coconut milk. Then, there’s the flavor: vanilla and cocoa. And lastly, the deal breakers: sea salt and sweetener. Not much more to this dessert than those few ingredients, and the taste is just what you look for in a pudding. However, my take on this is a bit thinner than a pudding would suggest, so I tag on “smoothie†to the title. Whatever it is, it’s goooooooood. And for a girl who has a sixth sense for chocolate, this hits the spot.
It’s a smoothie, chilled in the freezer for a crackly top and added thickness. Filling, but not guilt-worthy, as the ingredients are simple, real, and good for you!
Chocolate Pudding Smoothie
Ingredients (2 glasses)
- 1 1/2 cups coconut milk
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 5 drops liquid stevia (or 2 tbsp of agave, maple syrup, or honey)
Instructions
Stir 1 1/2 cups of coconut milk, 1 tbsp of cocoa powder, 1 tsp vanilla extract, 1/4 tsp salt and 5 drops of liquid stevia or 2 tbsp of any other sweetener of choice (agave, honey, maple syrup, brown rice syrup, etc.) in a pot over low heat until mixture is smooth and warm.
Pour into wine glasses, cover, and place in the refrigerator to cool (or the freezer) to thicken.
A few hours should do the trick in the fridge to get the mixture chilled, but only 30 minutes or so in the freezer for a thicker consistency.
Slurp! A perfectly satisfying dessert or snack (or breakfast), and no food baby to nurse the next day.
