One of my favorite uses of tortillas is for pizza. Today I didn’t have any cheese on hand, so I decided to use something else creamy and delicious and just as addictive – hummus. This recipe brings an earthier flavor to pizza night. It’s light and you can get away with eating more slices while still feeling energized and nourished. And it’s vegan too. Let me just say: MMMMMM-credible.
Vegan Hummus Pizza
Ingredients (1 tortilla pizza)
- 1 tortilla (whole-wheat/whole-grain)
- 1/2 cup your favorite hummus
- 1 tbsp extra-virgin olive oil
- 1 eggplant, sliced into discs
- 1 tomato, chopped
- 2 scallions, chopped
- Salt and pepper
- 1 tbsp extra-virgin olive oil
Instructions
Prepare your favorite plain hummus (or mine) or use a store bought version.
Slice the eggplant into thin disks and chop the tomato and scallions.
Place the tortilla on aluminum foil and spread a thin layer of hummus on it so that there is a 1-inch distance between the edge of the disc and the beginning of the hummus. Lightly drizzle the top of the hummus with extra-virgin olive oil.
Like you would pepperoni, place the eggplant slices across the hummus spread, making sure none overlaps. Next top with the tomatoes and scallions. Season with salt and pepper and drizzle the pizza with extra-virgin olive oil to help the eggplant crisp when cooked.
Pop in the oven and broil on medium-low for approximately 10 minutes.
The key is for the eggplant to have cooked through.
