As much as I love to keep things healthy, every once in awhile I like to fry cheese, because I love fried cheese. A lot. These fritters bring together the wholesomeness of cauliflower, chives, goat Swiss cheese, and eggs and a frying pan. These are so delicious and gone in minutes. They are also wonderful as a cold snack (yo wassup 3am), and can be crumbled into a salad, used as the “meat” for a sandwich, or even cut and mixed into some scrambled eggs.
Swiss Fritters
Ingredients (15 patties)
- Half head of cauliflower, processed into fine pieces
- 1 cup swiss cheese, grated
- 1/4 cup chives, chopped
- 1 tsp each salt and pepper
- 1 tsp paprika
- 2 tsp dried oregano
- 1/4 cup almond milk
- 1 egg
- Olive oil for frying (about 1/4 cup)
- Chives for garnish
- Tahini for garnish
Instructions
Begin by dicing the chives, grating the Swiss cheese and processing the cauliflower.
In a medium-sized bowl, toss together the chives, cauliflower and cheese. Add the salt, pepper, paprika and oregano.
Pour in 1/4 cup of almond milk and 1 egg. Fold the mixture until all the ingredients are evenly distributed.
Form small, flat patties with your hand and delicately place them in a frying pan onto oil that is sizzles when you splash water at it.
Handle the patties delicately, as they will fall apart until fully cooked on both sides. Flip after 2 minutes on each side, or until a crusty brown. When finished, place them on a plate covered with paper towel to absorb excess oil.
Serve on a platter, garnishing fritters with chives and tahini.
