Tomato Basil Bites

So simple. These have to be my among my favorite combination of flavors (and colors!). With pesto left over from the day before, I decided to utilize the rest a bit more creatively than the all-too-familiar scene involving spoon, me, sir couch, and our food baby. This is also a far more satisfying spread thin across many servings and, though you may not want to, presents a far better opportunity to share.

Tomato Basil Bites

Ingredients

  • 2 tomatoes, sliced in 1/2-inch thick pieces
  • 1/2 cup of your favorite pesto (or mine)
  • Parmesan cheese, sliced
  • Salt and pepper
  • Handful of fresh basil leaves
  • Balsamic vinegar (optional)

Instructions

Cut tomatoes into slices. Lay the slices out on parchment paper, top each one with one teaspoon of pesto and a bite-sized slice of parmesan cheese (or mozzarella), and season with salt and pepper.

Broil in an oven on high for about 2-3 minutes. Keep an eye out so the cheese doesn’t burn. The oil from the pesto will soak through the tomato and the fat from the cheese will follow suit, bringing with it an irresistible flavor.

When all is said and done an the tomatoes are soft, but not falling apart into amorphous mush, serve the tomato bites on a party platter (for one) and top each one with a basil leaf. Drizzle with balsamic vinegar for a traditional experience, but I sometimes like to let the subtle flavors of the cheese and basil do the talking, and the pesto is all the bite I need.
