Refreshing Raw Beet Salad

Even a hater will love this salad. The addition of citrus and green onion brings some oomph to the earthiness of the beets. It’s a refreshing, filling salad that starts any meal off on the right foot.

Beets: contain folic acid necessary for the production and maintenance of new cells, which benefits pregnant women and those undergoing physical healing, guard against colon cancer, protect against heart disease, are high in sodium, magnesium, calcium, iron, and phosphorous, are available all year round, contain cancer-fighting pigment betacynin, cleanse the blood, strengthen the gall bladder and liver, and can be used to treat acne.

Raw Beet Salad

Prep Time: 10 minutes

Ingredients (2 servings)

  • 1 beet, washed
  • Juice of 1 orange
  • Juice of 1/2 lemon
  • 1 scallion
  • 2 tbsp extra-virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp pepper

Instructions

Shred the beet with a hand grater or in a food processor with the appropriate attachment.

Add the orange and lemon juices, chopped scallions, olive oil, salt and pepper.

Toss and serve atop romaine lettuce leaves. Enjoy!
