Quick Raw Shortbread Crust

So yesterday I showed you how to make a vegan caramel sauce, which is a dessert staple that could always be healthified. Today, I’m sharing with you a raw, vegan version of shortbread crust, which can be used as the base of all your favorite pies and cakes. On Monday, I’ll share a light, vegan filling to top the crust. Stay tuned!

Walnuts: contain nearly twice the amount of antioxidants than the same portion of any other nut, contribute to heart health, reduce the risk of certain types of cancer, prevent Type 2 diabetes and are packed with protein and fiber.

Raw Shortbread Crust

Prep Time: 3 minutes

Ingredients (Yields 1.5 cups or 1, 9-inch p)

  • 3/4 cup shredded dried coconut (unsweetened)
  • 3/4 cup walnuts
  • 5-6 pitted medjool dates
  • Dash of sea salt

Instructions

Assemble the walnuts, dates, coconut flakes and sea salt.

Pit the dates and process all the ingredients until crumbly but able to hold together then pressed.
