Got five minutes? That’s all you need to make this simple salad. It’s small in size but big in taste, combining Thai flavors on a hydrating backdrop of grated cucumber. I am personally not a huge fan of cucumber, but considering how beneficial it if for your health and appearance, I try to sneak it into my diet without too many add-ins. Luckily, this dish fits the bill.
Cucumber is one of the most glow-worthy foods out there!
Cucumber: is 96% water and keeps the body hydrated. It is packed with vitamins A, B and C and minerals that contribute to clear skin, bring sunburn and windburn relief, and reduce swelling. Cucumber contains powerful lignans that reduce the risk of breast cancer, prostate cancer, uterine cancer, and ovarian cancer. The veggie also controls blood pressure, benefits teeth and gums, aids digestion, promotes joint health treats tapeworms, cures diabetes, reduces cholesterol, stimulates hair growth, and helps with weight loss.
Grate the cucumber, chop the garlic, and whisk together the soy sauce and tahini. Toss all ingredients together in a serving bowl.
Season with cayenne. There is so much flavor in this seemingly unintimidating salad. It’s light, goes down easy, but leaves with an impression. And you’ll want more, trust me, so you might want to double this recipe.
