I was in the mood for a new salad, since I tend to stick with the same old combination. I tossed black eyed peas with other robust flavors such as garlic sun-dried tomatoes, lemon, and parsley. The fiber and protein-rich black eyed peas make this salad worthy of an entire meal. Enjoy!

Ingredients
- 2 cups cooked black eyed peas
- 1 cup chopped romaine
- 8-10 sun-dried tomatoes
- 1/2 white onion, chopped
- Juice of half a lemon
- 1/4 cup extra-virgin olive oil
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
