Ingredients (2 “sandwiches”)
- Large bunch of rocket or spinach leaves (2 cups)
- 2 cloves of garlic
- Dash of salt
- 1 teaspoon olive oil
- 1 tomato
- 1 tablespoon crumbled feta cheese
- 2 teaspoons balsamic vinegar
Over medium heat, warm up the oil and add the diced garlic. As it sizzles, add the stemmed rocket leaves or spinach leaves. Cook until wilted, but not browned â€“ about 1 minute.
To assemble, slice across the width of the tomato.
Lie one slice flat on a plate and top with the wilted leaves and crumbled feta. Close the â€œsandwichâ€ with another tomato slice. Drizzle with balsamic vinegar and serve!
