Roasted Beet & Carrot Lentil Salad

This recipe reminds me why I can eat salad and never get bored – it’s packed with protein, fiber, greens, and roasted vegetables. The best of everything, essentially. The colors are vibrant, the textures are diverse, and the taste satisfies each taste bud. Enjoy!

Beets: contain folic acid necessary for the production and maintenance of new cells, which benefits pregnant women and those undergoing physical healing, guard against colon cancer, protect against heart disease, are high in sodium, magnesium, calcium, iron, and phosphorous, are available all year round, contain cancer-fighting pigmentbetacynin, cleanse the blood, strengthen the gall bladder and liver, and can be used to treat acne.

Lentils: are an excellent source of soluble and insoluble fiber, effectively helping to prevent digestive and cardiovascular disorders. They also contribute to lowering cholesterol and maintaining blood sugar levels. Low on the glycemic index, lentils release their sugars slowly, keeping you fuller and more balanced for longer.
