Tahini Apricot Apple Sandwiches


This recipe is a fun snack that redefines the typical sandwich bun. Using apple slices, you can create a compact bite filled with your favorite nut or seed butter, dried fruit, and fresh mint. The result is the perfect serving to satisfy a hunger pang at any time in the day. Enjoy!

  • 1 apple
  • 2 tablespoons nut or seed butter
  • Small handful of dried fruit (chopped if not raisins)
  • Small handful of fresh mint


Cut 1-inch thick slices along the width of the apple. You should cut about 4 slices total. Spread nut butter on the face of all the slices. Top two of the slices with raisins and a few mint leaves. Close each of the slices with the two remaining slices.
