Cherry Tomato Mint Salad


I quickly put together this salad to complement my dinner. It makes for a colorful side dish and palette cleanser. I used red, green and yellow cherry tomatoes for color contrast. The fresh mint heightens the salad’s aromas. You can make it more meal-worthy with the addition of feta cheese, olives or any other vegetables. Enjoy!

Cherry Tomato Mint Salad

Ingredients (1 serving)

  • 1 cup cherry tomatoes, stemmed and halved
  • 2 tablespoons extra-virgin olive oil
  • Juice of half a lemon
  • 8-10 leaves fresh mint
  • Sea salt and freshly ground pepper to taste
  • Dash of red pepper flakes


Whisk together the olive oil and lemon juice. Toss all ingredients together in a bowl and serve with a dash of red pepper.
