Cheesy Corn Dip


This recipe is as easy as a homemade dip can get. The sweetness from the peas is deepened by the richness of the cheese. The scallions add a flavorful backdrop that makes the dip something to keep dipping in, again and again. Enjoy!

Cheesy Corn Dip

  • 1 cup defrosted corn kernels
  • 2 scallions, diced
  • 1 teaspoon butter
  • 1/2 cup hard goat cheese
  • Salt and pepper to taste


In a pan over medium heat, melt the butter. Add the scallions and cook for 30 seconds before adding the corn. Mix for a few minutes or until corn begins to deepen in color but not brown. Add the cheese and mix just until it is thoroughly melted.


Serve aside chips or eat as is. Enjoy!
