I like to pair my grains with something creamy, but not necessarily cheese or any other milk-derived product. I find that the avocado is a great complement to starchy grains, as it adds a soft, rich texture to the dish. This post is simply showing you a cute way to serve your grains, whatever it may be.
All you have to do is slice an avocado around its core, twist apart, remove the core, scoop out a little more of the flesh of each avocado half to reveal a deeper cup, and then fill each with desired grain.
For this, I used leftover white rice that was cooked plain and added peas, olive oil, chopped cherry tomatoes and salt and pepper.
