Ingredients
- 1 zucchini
- 8 cherry tomatoes, quartered
- 3 ounces hard goat or sheep cheese, chopped into 1/2-inch cubes
- Handful of dill or basil
- Salt and pepper to taste
- Olive oil and red pepper flakes for garnish
Instructions
Using a vegetable peeler, slice down the length of the zucchini, creating thin strips.
Take one zucchini slice, place tomato quarter, cheese and a piece of herb on one edge of the zucchini, and roll around the filling, and continue to roll until you reach the other end. Set aside and repeat the process with the remainder of the zucchini slices.
When finished, drizzle with olive oil and season with salt, pepper and red pepper flakes. Enjoy!
