I tend to eat my greens raw, because I belief that in their uncooked form they retain an impressive nutritional profile and contribute better to digestion. However, eating raw is not always better than cooking. Cruciferous vegetables, some greens, carrots, and tomatoes are just a few of the vegetables that, when cooked, contain nutrients that are more bio-available to the body. This recipe is a product of this intention. I pair lightly sautéed greens with fried capers and feta cheese. Super flavorful and good for you too! Enjoy!
