A light bean soup that has a kick is just what I crave when I’m looking for a filling meal that packs the protein but still leaves my taste buds in heaven. This spicy white bean soup couldn’t get easier. It’s good hot or cold. Enjoy!
Spicy White Bean Soup

Ingredients
- 2 cups canned white beans, rinsed and drained
- 1 white onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 garlic clove, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes
- 3 cups water
Instructions
In a large pot over medium-high heat, add the olive oil, onion, red and green peppers, and garlic. Season with salt, pepper and red pepper. Let them sweat until the onion begins to turn translucent. Add the beans. Stir until evenly combined. Add the water and bring to a boil.
Reduce to a simmer and cook for 25-30 minutes. Enjoy!
