Baked Corn Patties for Soups, Salads and Side Munchin’

The flavor of these guys is pretty amazing. It’s like a smaller, denser version of corn muffins with the punch of red bell pepper, onions, zucchini and cumin spice. I find it perfect for a snack to tide me over in between meals, with a dab of butter to help it go down (of course), and even more perfect to eat with hot chili soup. They are vegan too! Enjoy!

Corn: is a rich source of vitamins A, B,and E and numerous minerals. It is loaded with fiber and thus contributes to improved digestion and overall colon health. Corn’s antioxidant content also makes it anti-cancerous. Corn has been linked to preventing Alzheimer’s.

Baked Corn and Pepper Patties

Ingredients

  • 1/2 red bell pepper
  • 1/2 white onion
  • 1 small zucchini
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin powder
  • 1/2 cup corn flour
  • 3/4 cup water

Instructions

Finely dice the pepper, onions, and zucchini. In a pan over medium heat add the oil and vegetables. Add the salt, pepper and cumin. Cook until tender and browned.

In a bowl whisk together the water and corn flour. Add the vegetables and stir until evenly combined.

Scoop 6-8 patties onto a greased baking sheet and place in a 375 degree Fahrenheit oven for 8-10 minutes.
