Quick Zucchini Lasagna

Here’s an easy way to enjoy lasagna without the labor and ceremonial preparation process. It’s a disassembled version of a kitchen classic, without the noodles and without the cheese. And trust me, it doesn’t need either of those things. The zucchini is baked to crispy perfection and layered in between a homemade marinara sauce that has a garlicy, deep taste and chunky texture. Enjoy as a side dish, atop cooked quinoa, or as the main star. Enjoy!

Zucchini: has only 36 calories and 10% of the recommended daily allowance of dietary fiber in just one cup, lowers cholesterol by attaching to bile acids and aiding in digesting fat, contributes to “regularity”, prevents cancer with its high antioxidant content, aids prostate health, is high in manganese (19% of the recommended daily allowance in one cup), lowers blood pressure, is anti-inflammatory with its vitamin A and C content, and prevents heart attack and stroke.
