Roasted vegetables don’t seem like much beyond what they are – roasted vegetables. Well, now, as delicious as they are plain baked with a bit of oil and seasoning, they can really go oh-so-much further with a few more ingredients. This recipe is my father’s masterpiece, mostly because it’s easy and appears to have been done before, but it really is unlike anything I’ve ever tasted. It must be in the measurements. I like to enjoy my share as a side dish, but these roasted vegetables are hefty enough to be the “meat†of a sandwich wrap or the bulk atop a pizza. Enjoy!
