A stir fry always brings a host of veggies to the table that are packed with strong flavors. You simple cannot get bored of them. I like to stir fry all sorts of vegetables, but for this stir fry recipe, I stuck to the basics – green beans, carrots, scallions, broccoli, and bell peppers with a hint of fresh ginger. The mushrooms are meant to replace the “meat” of the mix, which is generally some sort of tofu, beef, or chicken, all of which are hard to digest and mucous forming in the body. Enjoy!
