Whenever I’m in the mood for something sweet, my mind jumps to chocolate. And, a lot of it. In an effort to create more healthy dessert options for myself, I began to explore gluten-free flours. Coconut flour is my latest endeavor. In this coconut flour cookies recipe, all you need are 3-4 ingredients. The result is a tasty, chewy coconut bite that gives you the sweet fix and the fiber and protein to keep you regular, satisfied and happy. Enjoy!

Coconut flour: is made from coconut solids that have been ground into a fine powder. It is gluten-free, is rich in dietary fiber – 39 grams in 100 grams – and contains beneficial fats and protein – 19.3 grams in 100 grams.
