This brunch never gets old! Sweet potatoes fill in for white potatoes and are flavored with onions, peppers, spices and herbs. You can nix the addition of eggs to keep it vegan, but I was in the mood for one. Instead of butter, I use coconut oil for a more complex flavor profile. Enjoy!
